Wow, that is a beautiful cozy kitchen. This ratatouille is very similar to pisto manchego which is already a fav of mine. For some reason, I always thought ratatouille required roasted vegetables. Thanks for sharing.

@laughingspeakers It was such a beautiful apartment, and great kitchen. Very small, but they have use the space so well! The traditional recipe they showed me required each vegetable to cook in a different pan on the stove, which I didn't do to save dishes, but it was definitely not roasted. I think what makes the dish French is the herbs, and the flavors of Provence, but it is very simple - just how I like it!

@Livna2707 aw, nice! Thanks for posting, we are having an excellent time here with our new friends. Hope you enjoy following us along on our travels, but we leave France soon unfortunately... I like it here because I can at least say things in French - not very well, but enough to be understood. Our next stop is Turkey, and I will be totally lost!!
