Here in the US you can get jicama in any supermarket. It is not actually a potato, but it is called a "Mexican potato." I'm not sure if you can get them in the UK. I would ask your local supermarket or health food store. I don't know what to substitute for it since it has such a unique flavor. Sorry I couldn't be of more help. Good luck!

I peel jicama b/c it is woody and does not taste very good. If I am making baked potatoes, I don't peel b/c the peel contains vitamins and minerals. I don't make cooked potatoes very often though b/c we eat mostly raw.

Well, actually you can eat raw potatoes, but they don't taste very good (at least not to me). Jicama tastes good raw, so that's why I used it in this recipe. Thanks for your question!
Thanks! This can be confusing for those new to the raw lifestyle. When buying something "packaged" make sure the label says "raw," such as raw nut butters, tamari, and tahini. Most packaged condiments are NOT raw however such as ketchup, mustard, mayo etc. When in doubt, assume it is not raw and make your own.

Not necessarily. You can get real mineral-rich sea salt that is kosher style. Check Whole Foods.

I wouldn't say it is worse, however I did read that article and agree that it is probably not that healthy. Substitute honey instead.

Well, actually you can eat raw potatoes, but they don't taste very good (at least not to me). Jicama tastes good raw, so that's why I used it in this recipe. Thanks for your question!
