@luvis4bitten Actually, I think that it is a half and half mixture of vanilla and chocolate cake, Chef John just put more emphasis on the chocolate part of it in his video.
@georgezelenka Red Velvet cupcakes traditionally use acid (such as buttermilk and vinegar) to react with the baking soda and give it more lift (also reacting with the cocoa to create the red color back in the day, like chef john explained). I'm pretty sure vinegar is a lot more acidic than buttermilk, so you just need a little bit to help give the batter the right acidity. The buttermilk-chocolate mixture is really what makes the red velvet cupcake unique.

@giangbkxp Make sure the butter is soft. Leave it out at room temperature for a while, but not until it's melted. That should help =)
