  • @convoku I'm not saying I don't trust food coloring (when did I?). I just don't think I have enough food coloring of any particular color to make 1 Tablespoon! :( Will probably have to buy that small bottle of red food coloring and use it all at once. Just really surprised by the amount.

  • @hobogizrl101 if you don't have buttermilk I can give a substitution that works perfect for me

    1tbsp of withe vinegar+enough milk to equal 1 cup(let it stand for 5 minutes)

  • I tried so many times but when i beat butter and sugar then add the egg in, the mixture becomes grainy and disgusting. I don't know how to make it soft and creamy like you:((

  • @giangbkxp Make sure the butter is soft. Leave it out at room temperature for a while, but not until it's melted. That should help =)

  • hi what brand of food colouring did you use? the one we used is a bit pinkish and the coco basically takes over (colour wise) lol

  • @countach27 hi, are you using self raising flour? I think that's the problem. To prevent it rising like that the mixture calls for plain all purpose flour this prevents the convex tops

  • Chef John, I don't know what I'm doing wrong but my cupcakes always come out with convex top, not flat like yours. It doesn't matter how much or little batter I put in the liners, I'm a bit annoyed knowing I'm not having the best cupcakes I can make. Any tips or advice?

  • Why vinegar?

  • @georgezelenka It reacts with the baking soda to make it rise.

  • @georgezelenka Red Velvet cupcakes traditionally use acid (such as buttermilk and vinegar) to react with the baking soda and give it more lift (also reacting with the cocoa to create the red color back in the day, like chef john explained). I'm pretty sure vinegar is a lot more acidic than buttermilk, so you just need a little bit to help give the batter the right acidity. The buttermilk-chocolate mixture is really what makes the red velvet cupcake unique.
