It looks like the barrel still has a hitbox when it's in that shattering animation, and hitting it during that time makes it break again. I'm reminded of how in The Guardian Legend, you can use Enemy Erasers to destroy the explosion sprites enemies burst into when destroyed, and keep making them explode until they drop an item.
Point farming is a necessary evil in some games, but I admit, doesn't make for a good playtrhough... Tecmo's fault for allowing thr trick I guess,
