  • I love Betty's videos because a) her food always rocks, b) she uses normal ingredients that everyone has, c) her recipes are pretty simple and easy to make, d) she explains them really reall and e) she is SOOO pretty!!!

  • @Beachbabe55846 yes, fresh potatoes are fine; however, you should slice them up like the ones in this video and boil them until they are partially done before adding them to the recipe.

  • @eunit22 Yes, you may shred your own potatoes. You will probably want to boil them until they are about half-way done, so that they will not be crunchy. I would use about 2 cups of shredded potatoes. Yes, you may freeze ricotta cheese. Just thaw it out when you need to use it.

    I was wondering what type of glassware you use to transfer from the refrigerator to the oven..heat tempt. Pyrex? Would I need to let it sit out at room temp, before placing this dish into the oven? Thanks.

  • @mommytomario The best solution would be to cook some peeled potatoes, drain and cool them. Then shred them with a kitchen shredder and proceed with the recipe.

  • This dish looks so delicious and easy to prepare and I loved your plating at the end. I always worry about my dishes cracking after they have gone from fridge to oven. Do you have any recommendations on bowls or dishes that go from cold to hot easily without cracking?

  • @snapshotmelly My only recommendation is that you choose your bowls and dishes wisely. Some ornamental pieces cannot take quick changes in temperature, but you can always be comfortable with glassware like Pyrex.

  • Looks great - a kind of crustless quiche for those avoiding gluten. Leave out the potatoes and it'll be perfect for a low carb diet.

  • I added spinach, green peppers, chili powder and cheddar jack cheese. Delicious!

    i think your cooking videos are great. This is something a newly wed can come to that would be better than a cookbook. You are very exact in your recipes with little tips which I believe is very important. It's like being in your kitchen. Do you have a recipe for meatloaf? Keep those recipes coming.

  • @Kristalina722 Hi! Thanks for your nice comment! I eat everything that I upload--just in small portions. What Rick and I (and the rest of the family) don't eat, I refrigerate or freeze, and use on a day when I don't plan to cook. It works out about right, because I try to upload a couple of main courses, a couple of side dishes, a soup or casserole, a snack or appetizer, and a dessert each week--so there is not really a lot left over. I also workout at the gym.

  • Hi Betty ;) I went to 3 stores looking for dried hash browns. No luck : ( I did however find a bag of thawed wet (but drained) hash browns called "Simply Potatoes Fresh Potatoes, Never Frozen",Shredded Hash Browns in a bag. The bag size of the bag is 1 lb. You just open the bag and put them in a frying pan.Will this work? I also bought 2 bags. Is 1 bag enough? Is it too much? I'm putting it together tonight.TX!

  • @ohpineapples The potatoes you bought sound like they will work fine. I think 1 lb. will be enough. You can put the mixture together and see if it looks appealing with that amount.

  • @bettyskitchen Hi : ) My 1 lb of potatoes soaked up All the eggs. Mine didn't look like yours : ( I had to add a few more eggs.After doing that I felt I had to add a bit more of everything else too.Finally I reached what looked like yours ;) I added cilatro to it & and it was very good. All-in-all it turned out pretty good. I think next time I will add more cheee tho. Pretty good. Thanks Betty.

  • @toprox100 You may not be able to find them. Just peel and cut some potatoes in this shape, boil them for a few minutes, and add them to the recipe. It will be great (even better!).

  • Hi Linda! I'm glad you know to substitute spring onions for green onions! Yes, you could grate or shred fresh potatoes, instead of using the packaged kind. It would probably be a good idea to pre-cook them a little, because the packaged kind are very soft once they are soaked in water! Thanks for your lovely comment!

    Im a big fan of your videos- i work in TV over here in London and i think your presentation is very skillful-warm in style -yet you manage to convey a large amount of information in each sentence. I'm guessing your communication skills as a Maths teacher are standing you in good stead! You could teach some professional presenters a thing or two!

    Here's a challenge- a vegetarian recipe that has no tomato or cheese in it-we vegi's get so bored with them!

    I love sour cream- not to big on eggs-i try and drink soya instead of milk-for no other reason than my skin is much better the less diary i eat . But i happily have milk in cooking ;-)
