    I failed on my pandan cake because I didn't strain the Pandan leaves and juice, I grind the leaves and water together then straight dump into the mixture. Stupid me! hahaha

  • traditional pandan cake should not contain any green colouring. You shoud put more pandan leaves to get a stronger pandan flavour and genuine green hue.

  • when whisking the egg whites from the beginning to the end of stiff peaks, how many minutes approximately, especially during stiff peak time? did anyone else have problems with lumps when cake flour was added? I did... had to strain it and used a spoon to press out the clumps. please tell me if I did anything wrong...

  • Nah.. cake flour only please.. texture will be different if you use other types of flour..

  • Hello, yes, I do add green coloring as well to achieve a darker color. Honestly the coloring doesn not alter the taste of your cake.. So you can add it bit by bit until you get the color you want but pls minimize this action as stirring will destruct the volume of the cake esp aft egg white is added. (:

    about thte coconut milk.

    Is that the coconut powder mixed in water? or the coconut milk from a can?

    Where u get coconut milk? does it taste good if i didnt put in the coconut milk? I m not sure if i can find it in shop

  • Hello, I use coconut milk from a can. For stronger flavor, do not shake the can at all. Just use a can-opener to open it and scope the concentrated coconut that forms on the top of the can cover and on the top of the liquid. (:

    And coconut milk is a must in this recipe.

  • Here are what I think may be the problem + solution:

    1) Inappropriate size of the baking tube pan. You need to use a 18-cm one if you are following my recipe. If smaller, the mixture will have "nowhere" to go but to rise too high.

    2) Flour. I use cake flour for this recipe. Avoid self-raising flour, for example, as it will rise too much. (:

  • Hello, with my experience, it shouldn't rise 4 times. Probably just double the volume of the final mix. By right, it should sink when it is cooling but not when it is browning though..

  • I heard from my mom you have to overturn it when you took the cake out from the oven until it cools completely.

  • Is that a mini oven? thats so cool its like an advanced version of those kiddie cupcake ovens

    I have to say that even the making of the cake with my 4 year old daughter was pure enjoyment, and not to mention the outcome. I did actually make a roulade out of it and put some chocolate spreading, but the texture and the colour and taste of your pandan cake was there. Thank you again!
