He used a cheat to get Tifa to be an assist character then got Yuffie to be his enemy then he made Sora invisible. So basically Tifa is the only one fighting Yuffie.

The uploader used a cheat code to make Sora invisible so that while he is moving around he can act like a cameraman watching the fight. So he's not really playing as either Tiffa or Yuffie. He probably used another code to make Tifa part of his party then got Yuffie to appear as the enemy.
