  • 材料 五花腩︰ 6両 梅菜︰ 3両 蒜茸︰ 2茶匙 洋葱粒︰ 1茶匙 青葱粒︰ 1茶匙 調味料 (炒梅菜用) 糖︰ 2茶匙 生抽︰少許 老抽︰ 2茶匙 花雕酒︰少許 (炸五花腩用) 油︰適量 (醃五花腩用) 南乳︰半湯匙 糖︰半湯匙 鹽︰ 1/3湯匙 生抽︰ 1湯匙 老抽︰ 1/2湯匙 花雕酒︰少許 做法 1.將梅菜切碎然後浸水,直至味道適宜。然後下糖、生抽、老抽和­花雕酒炒兩分鐘後盛起。 2.用針於豬皮上刺數下,然後鑊內下油,將整件五花腩落鑊炸至金­黃後盛起浸於開水內約五分鐘。 3.將五花腩切片後,下蒜茸、洋葱粒、青葱粒、南乳、糖、鹽、生­抽、老抽、花雕酒與五花腩片撈勻。 4.先放 8至 10塊五花腩片於碟上,梅菜放於上面。蒸約一小時至五花腩夠腍便­成。
