How odd is it that in all of these games- we destroy the very incarnation of Death itself?

Firstly there was Leon- then Sonia, then Trevor, then Hector, then Simon, Christopher, Soleyu, Juste, Richter, Alucard, Nathan Graves, on and on. They all at one point or another vanquished Death.

There are probably several "deaths" (or shinigami's, in the Japanese). Each one is only a minor god of death, having jurisdiction over certain souls.

Most of them are probably not evil.

Yes, its from Shinto beliefs. Basically, they're spirits who guide the souls of the dead to their destination (the English word would be "psychopomp"). They are very similar to the grim reaper from European mythos.
