If the tongue is directly put in cold water after boiling the tough skin will peel off easy.

I do not take off the skin ever. Slice it with the skin thinly and then skin adds wonderful white "frane" to the slices. It also is kind of cruncy and adds to the taste.

I love eating tongue when it's boiled, shredded and put into soft tortilla tacos. Tongue is very lean. If you ever eat it with flour tortillas you'll be hooked for life.
