I will try your recipe - but I have a question - can you use all butter?
My husband is English and I'm American, we lived in London for years and loved to go to Cornwall on holiday. If I can turn out an authentic pasty, he will be so happy! It was very helpful to see a demonstration. Thank you for posting.
@Bibagirl63 Try half lard and half butter -- the melting point of butter is lower than lard, so doing all butter would probably change the consistency.

The dear of 'er. I always struggle with the pastry, I've never managed to get the right fat ratio (mine shaft proof). My Gran used to travel from Truro to Lincoln in the 70's with a special pasty making plate in her suitcase , she used it to cut out the pastry. All Grans pasties were the same size! Wish I'd payed more attention..but now I'm saved.

For non vegetarians, use lard. It makes a big difference. All flaky pastry in general comes out better using lard.

no use plain flour
for 2 pasties 8oz plain flour 3oz mixed fat marg/lard 1/2 tsp salt
3 1/2 tbs water rub in methord

I am normally used to the Finnish-American Pasties, but when trying the Cornish ones, I like the Cornish ones better. Don't tell anyone though!
