The emphasizing of words is suggesting an action and because he was already inclined to do it out of discomfort, it was very likely. a few times, the 'experiment' did not work. I'd like to see this done in a controlled test. One where the 'speaker' says pretty much the same thing but doesn't draw on a blackboard, and another when he does. And then have the results recorded by an imartial third party.

When he first gives him a handshake he breaks the handshake part way through. It confuses the mind and leaves it open to suggestion. This makes him prone to move later in in the vid.
Obviously he crossed his arms due to Derren planting the word cross. I think this is integral to the trick, which is why he made sure he crossed his arms. Crosshair comes from the earlier plant of cross.

He gets the man to cross his arms by saying cross and yourself. He says touching to hEAR this makes him touch his ear. Uncomfortable and sliding made him move.
