Have you consider of re-doing the wiring with Solar panels? Costco sells Coleman 55Watt Solar Panels for $199.99 (USD) which can help with your electricity. Also, with venting, when the kitchen ends up getting done, you probably need venting for food, will you consider getting a ceiling vent fan for those hot days? Also, I see that you have trims for the windows, are those going to be sealed shut and never intend to open? Everything looking good, sucks you have to redo everything again. Good Job
@ksmatic We have really looked into solar extensively, but it's just not cost effective. 55 watts will only cover about 3 lights at a time. I estimate we will consume an average of 400-500 watts continuously, so while 55 watts would contribute, it isn't worth 200 dollars. We looked at systems that would be adequate but they would be around $6000, and we have friends who have done this. I just don't think that expense is reasonable though.

@cyrus10112 There is a place for a bathroom between our bedroom and the bunks... I mean right now its just the space for a shower and toilet etc... but it's there.
