@mz40oz Hey there! Actually, once we ditched bread we no longer saw the need for anything like it. There are recipes out there for paleo bread, however they still pack a heavy carb punch. We prefer to keep our carbs under 150g (more like under 100g) per day. Even paleo breads made with coconut flour etc could rack up as many carbs as wheat. @mz40oz Try a small batch at first. I find that you can't really taste the coconut outright. It blends with the other flavours. Add a pinch of salt to the mixture as well (or some dark chocolate - just a bit) that ought to take care of any possible coconut flavour.
Watched your video half an hour ago, and just left all my work behinde to make those bars. Great use for my unfinished nuts and seeds (made some changes due to what i got in my house - for exampke - tahini instead of almond butter.
and some cacao and cinamon.
A question about the vanilla ext. is it Meccormic? Is it more concentrated than the vanilla you used in the cacao drink?
@nospecial26 Great questions! We didn't use McCormick vanilla, but any vanilla will do - preferably organic. How was it with the tahini and cinnamon? Sounds like an awesome flavour combo that I will have to try.
The tahini gives it a great taosted taste but makes the bar less firm in warm days, I also added cinamon, pistachios and pumpkin seeds. Pistachio gives it a good flavour. Great recipe, becouse it is do versatile.

@TinaKim You do need almond meal to stir into the coconut oil/nut butter mixture. If you use half a cup of coconut oil and nut butter, use a quarter cup of almond meal. i think i'll try making some of these. Are you not concerned of PCBs, etc. leaching from the plasticwrap/clingfilm? there are many studies showing concerns over the safety of such products, and i believe once the science has filtered through to the mainstream and legislators, that such products, especially for food uses will be withdrawn. I think baking parchment is a good alternative.
@stoptheidiotbox We have actually stopped wrapping them up unless we're taking them on the road, then I stick them in tupperware. We actually spoke with the author of Slow Death by Rubber Duck and he was less concerned with BPA from soft plastic, just hard plastics. However it does add a hint of coconut flavor to the dish (however, not an artificial Jell-o flavor). I suggest trying a dish with it and seeing if you like it. I agree, this is definitely a treat. I mention in the video that if you're trying to lose weight this is something you don't want to indulge in. However if you are at your goal weight and are training hard or an athlete, these are great snacks to keep your calories up without resorting to "protein" bars or other mass manufactured products.
Actually, this is probably the worst thing to have pwo since you want to avoid fat in order to replete glycogen stores. You mention quality source of protein - I don't see. Almonds, almond butter, almond meal are extremely high in omega6 - another downside if you're trying to balance omega3/omega6 ratio. These bars sound delicious, yes, but for most folks I think they should be viewed as a "treat" that you should consume only in moderation due to high fat content (healthy fats, yes, but high).
Liquidate it! Need some laugh tracks on that one.
