As long as the referee doesn't move any part of his body towards the ball as if to participate in play, it's a goal. When the ball hits the ref because he isn't a player it's as if it just diverts off a ditch in the ground. Technically, he isn't a player so hitting the ball at the ref and it going in is as valid as it hitting the beach ball that Darren Bent did against Liverpool.
