If you object to tofu, like I do, you can use cooked eggplant chunks instead. Cube the eggplant, or if it's Chinese or Japanese eggplant, cut into little half-moons. Nuke the eggplant for about 2-3 minutes, then throw it in like Donald did the blanched tofu. There is a similar dish called Yu-Shiang Eggplant which is like Mapo Tofu. Actually Panda Express splits the difference and does a spicy eggplant and tofu dish. They solve the tofu texture problem the other way you can do it: fry the tofu.
