Hi- I realized being long winded, that I edited out the part about how LONG to leave the pork in the oven. Once it's up to temp, the pork only needs to stay in there for 5-10 minutes, until it's completely cooked. You can turn the oven off after you put it in and let the pan keep the meat warm until you're done with the faux-tatoes. Enjoy!
