A stereo microphone captures identical data in both channels. To record "3D" sound, you need expensive mics and setups. You don't get 3D sound out of a 2D microphone.
Open up one of your favorite songs in a audio editor like Audacity and you'll see that both channels have identical data. Delete on of these tracks, and you now have a mono file.

You're welcome, I hope it helps. I can do a video about recording Skype conversations, but it's different on both platforms Mac and PC as the software is different. We'll see what I can do whe I get some more time.
