  • Peope of southern part of Tamilnadu make paniarum. Paniarum is a tamil word. Here I find it combined with a telugu word. Pretty strange.! Can we get this paniarum maker any where here in the USA?

  • @tmlakshmi You probably could find them somewhere, but as a substitute, I have seen similar cast-iron cookware that are used in Southern (US) cooking for making corn pones or corn muffins. They look fairly similar to this piece of cookware, but with different shaped spaces for batter. I see them at pawn shops a lot here in Missouri...

    You can order online. The cast iron pan is called Aebleskiver pan/skillet.

    You can order aebleskiver pan (which is what I use for making guntapunugulu or gundpangada in kannada) online.

  • Thank you, well shown. We tend to slightly saute the cumin seeds, onions and chillies before add them to the batter, that way it gives a nice flavour. It goes well with onion chutney!

  • Hi Sanjay! I can't believe this... I did not know that there was a recipe of this kind in any part of India. Do you know what is Takoyaki? Takoyaki is an octopus stuffed bonda (paniyaram) that is made in Japan!! I had been thinking of buying the Takoyaki pan (which looks exactly the same as your pan) but now I have more reasons to buy it! Thanks!! :D

  • Yeah, we add some sooji to ti and temper it with mustard seeds, curry leaves and hing. It tastes great. Thanks chef, great recipes as always!

  • Chef can I use the normal idly plate to make this ... or do I have to buy the iron cast for this ....

  • the plate needs to sit right on the flame for frying, so it needs to be thicker like the material of a frying pan, whereas idly plate is fashioned out of thin metal that isnt durable for direct flame....
