Today Apple uses Carbon mainly for C++ developers and the porting of apps from other systems. Carbon apps tend to lack core features you normally see in Cocoa.
A few examples are iTunes (bought by Apple), Final Cut(bought by Apple), Adobe's software(Ported to Carbon and will be ported to Cocoa in CS5).
