There's so much I've learned about cooking from a Cantonese wok by watching your mother cook. Adjusting of the temperature, moving food in and out of the wok, removing excess oil, that you can use acidic ingredients in a wok such as tomatoes or wine and you can use very American ingredients in wok cooking such as ketchup and A-1 steak sauce (I guess A-1 is no longer just for steaks.) Thanks for posting.........
When I get my wok out, I put aluminum foil all over the stove, the walls behind the stove, etc. My wife almost killed me the first time I used it and the oil splattered everywhere, lol. Not to mention, every smoke detector in the house went off!
I can only imagine how mom's cooking would taste. I'm sure it's unbelievably good. Thanks for sharing!

哈哈, very nice. I've definitely learned something. It's also funny how Chinese kitchens have the walls wrapped in aluminum foil. Mine too, ha!
