  • I've always like watching Good Eats. Not just for the recipes, but the entertainment value as well. I learn to cook from this show, and he explains in detail how everything works

  • @PCGAMEfreak He's the only one on the Food Network that does know how everything works. Everyone else is a phony and poster boy :)

  • I tried Alton's recipe -- without aging the beef or using the terra-cotta pot (my oven is clean). Result? Even my dad (a self-proclaimed connoisseur of beef) thought that it was as good as any roast that he'd eaten at a restaurant. Don't be afraid to try it.

  • Yes you could 0Thechef0 they also make Terra Cotta cookers specially for this purpose. some of them need to be soaked for 30 minutes ahead of time to avoid thermal shock like alton metions here, so you need to read the instructions that come with it.

  • I just used this method to dry age some thick ribeye steaks for 2 weeks however I used a bamboo steamer which kept them dry and in a separate enviroment divided by slats. The steamer costed $6 at a local chinese store. The steaks that came out were $80 quality and ***** when it comes to what can be done at home. I do not use expensive wagiu either just good quality ribeyes that I find on sale . I will clean the steamer with a 50/50 water- vinegar mix and let it dry very well in a sunny spot

  • Winn Dixie said the Roast I bought was aged. I just purchased it two days prior to Christmas and left it packaged in the meat drawer. I brought it to room temp, started it low, removed it from the oven and tented it and raised the temperature. Fifteen minutes later I had a marvelous roast.  Yum!

  • I cooked a prime rib roast for Christmas last year, it was pricey, 10lbs/for $81, but worth it. Just amazing. I've had restaurant prime rib before but nothing like this. We even pigged out on the meat bones.

  • I used his recipe but personally I didn't think the "aging" step did much. I followed his instructions, even used a tiny little fan (it stopped working after a few hours b/c of the cold temp in the fridge.) Not enough water came out to merit the extra step. He was right about the cooking instructions though, mine came out perfect.

  • Can/should you age a pork tenderloin roast?  Thats my fav. cut of pork and it's right up there with prime rib roast.
