Usually the chutneys for dosas/idlis are seaoned/ given tadka with rai, udad dal and so on...

You can temper the chutney with the above mentioned ingredients however it will taste as good as without the tempering!

Soak the rice for 5-6 hours and once you grind it allow it to ferment for 8-10 hours.
