Apologies for the delay. 1. Yes it still tastes sweet because of the amount of sweet fruit inside!. 2. You can use any dry fruits ie dates, sultanas, currents, cherries etc and you can mix it up with a little chopped fresh orange etc. 3. Oil should be fine but advantage of baking paper is it insulates between the batter and the tin/glass.
and 4. I use 1 kilogram of mixed dried fruit (1000grams). I would assume it would be about 4 - 4.5 metric cups of fruit. Please let me know how you go.

a few questions:
