In Soulsilver, I bred five eevees and My Umbreon ended up male, even though I wanted a female. :P But it doesn't matter that much! This is how my party turned out:

Vaporeon (Mocha)-male

Espeon (Eclipse)- male

Umbreon (Galaxy) - male

Flareon (Blaze) - female

Leafeon (Gardenia) - female

Jolteon (Quentin) - male
