  • Hi Chef John, I just want to say thank you for the great soup recipes you offer on your channel. I just had 4 wisdom teeth pulled yesterday and, despite the fact that I am recovering extremely quickly, I still can't eat any solids or foods with seeds/nuts or the likes. I am making my fam prepare me some of your soups because (I never thought these words would come out of my mouth) I am pretty sick of drinking smoothies and milkshakes. So anyway, thanks for making recovery a little easier!

  • I'm new to your recipes and they are great, I love them (I've just made that perfect Baked French Onion Soup, amazing!! and I want to make this one too). But I see that you often use a lot of butter in your soups.... is it okay to use olive oil instead so that it is healthier? Does it make a big difference in flavor? I'm from Spain and I usually love olive oil for everything, instead of butter.. I also worry about the cream, I normally try to avoid using it. I would love to know your opinion.

  • I love this soup, but the fritters turned out so good we ended up eating most of them before a bowl ever showed up. Next time I doubled the recipe and everyone was much happier. Thanks for this wonderful idea -- it's perfect for cold weather.

  • I made this. The fritters worked well, but I hate blue cheese (everyone who likes it loved the fritters though). The soup was probably one of the best soups I've ever made.

  • Yes, any or no cheese would work. Also, you can add herbs and spices. Then you can cut them in half and fill it with something like chicken salad.

  • i suppose you could. in order to thoroughly melt the cheese they might end up being a little dry. they will probably be quite soggy too as you wont be able to have the crispness you get from frying. if you cant fit 2 or 3 small fried fritters into your diet that is too restrictive of a diet in my opinion.

  • If you make the fritters first and freeze them, they won't absorb much oil.

  • I just tried the soup minus the fritters (lack of time and ingredients), and I love it! It is very tasty and satisfying. Wow!

  • Some people make mozzarella fritters, I'm sure it'll be fine. If I'm not mistaken, it is traditionally mozzarella.

  • I wonder if you could use a different type of cheese to make the fritters. I'm not a fan of blue cheeses but I wonder if this would work out with either cheddar or swiss or provelone?

  • of course you can use different one.. pick one you like. ofc not too hard cuz it might not melt fast enough :-)

  • Cool. Thanks for the response. I used to think I liked blue cheese (I liked blue cheese dressing but only because it tasted like ranch) as a child but then my father got a salad with blue cheese crumbles on it & the stuff was so acrid it burned/stung my tongue & tasted nasty & I've never liked blue cheese since. I think a good mild or sharp cheddar would be awesome with the cauliflower soup so I may try that. Like you said, though, I'll try to pick one that's not too hard so it will melt. :)

  • Try some really high quality gorgonzola dolce (sweet gorgonzola/Italian bleu cheese) with some apples or good pears. You'll change your mind about blue cheese. :)

  • I like bleu/gorgonzola/stilton with figs and dates myself and roast beef as a canapes >:) add crackers if you wish.
