and number 2 is here because it wouldn't let my type anymore so 2) when resting a steak you should really cover is with foil and the wrap or drape in a teas towel, you should never have lots of juices like that running out because by resting a steak properly that will draw all those juices back into the steak
well you did two things wrong love. 1) only season one side at a time if you salt both sides together the salt dries out that side of the meat, what you need to do is salt one side and start by cooking the salted side then just before you turn the steak salt the other side.
