I'm not a chemish nor an electrician but ? you were hitting the pickle with an AC charge so was the pickle acting more like a poor filament in a bulb ? i.e. creating light and heat because of resistance. You can't use a GFI or the experiment would get nowhere ( I think, but don't know) but I hope you at least had the cord connected to a power bar for a quick sure off. Would it work similarly with DC ?
Well, the filament in a bulb is radiating energy in the visible spectrum because of it's high temperature. The pickle didn't get nearly that hot ... the light emitted is from the electrochemical reaction. Should work similarly for DC power, but I don't know if a GFI outlet would be a problem.
Why don't you try it? I believe the GFCI would trip. Think of it a gentleman's bet -- and another chance to make even more pickles glow! It'd make for a great experiment -- similar to Myth Busters. Your kitchen and bath should have GFCI's installed (I believe it's required by NEC specs).
WARNING TO OTHERS: Playing with 120VAC bare copper wires and pickles could be very dangerous. Electrocution is possible. Only perform these experiments with qualified personnel present -- you know, like Physics or Electrical guys. And kids, don't stick knives into the toaster or you'll regret it!!
