when u start a new project/song, tracks 1 and 2 should automatically be virtual instrument tracks, if not, or if u want to add a new one, right click on the track and hold mouse over "insert new track" then when the other list appears click on "new virtual instrument track" when u have a virtual instrument track, click on the lil keyboard icon and choose from a list of instruments. after u choose double click on the actual track field and start putting in notes in the piano at the bottom
