from my understanding of it, it becomes one word when used as an adjective to describe something as common. so the sentence "Smog is an everyday nuisance in some cities." would be correct, but "I have to put up with smog everday." is incorrect.
So anyway, I think it is just a case of people confusing the two, and not just randomly putting two words together as you seemed to think.
You know how "cannot" is one word? Well, I know someone who strings all words that are used in contractions together. "Donot" instead of "Do not", "willnot" instead of "will not", and so on. IT DRIVES ME CRAZY.
Even in Dutch every day is not one word. (a lot of words that are 2 words in English are one in Dutch e.g.: smurf hat = smurfenhoed)
