First, if you listen to anything from the romantic or contemporary period, emphasis on contemporary, you'd eat your words. Besides, your formula is sufficient to make a classical period piece, but the real trick is being able to take something so regular, aka V7s, IV-I cadences, and make it interesting. Just because it's regulated doesn't mean it's not interesting to listen to.
