Sweet, I was actually saving up for this super expensive copper pan because I have a cousin who says that pan sauces can ONLY be cooked in french copper pans (she's a bit of a snob, lol). Looks like I can just use my dirty old 10 dollar cast iron pan. Thanks!

i asked mom and my sister once what i could substitute alcohol with, and they said viniger. i guess it isn't the same but it's more... non-alcoholic that way :)
A good Amontillado sherry is an excellent alternative, and frequently used instead of brandy in many restaurants. If you have a concern about cooking with alcohol itself, just remember that when you reduce the sauce the alcohol will be evaporated off in the process due to it's low boiling point.
I like to add some Dijon mustard to that sauce.

k, "poivre" is from french and spanish root meaning poor! real steak a poivre is just pepper and salt, poivire=poor!

Dude... obviously you flunked remedial chemistry. Boiling alcohol makes it non-alcoholic. Otherwise you'd get cirrhosis from coq au vin.
