I always peel my potatoe first and cut it in half. Then I flip it to the side and cut it into slices, then stack them and cut them into strips. It's easier that way.

That is not a "Julienne" A Jullenne is a cut into small this strips about 1/8 X 1/8 X 1/8 and is 2 1/2 inches long. A true french fry cut is called a "Batonnett". it is 1/4 X 1/4 X 1/4 and is about 3in long. PLus, you need to mention that you need to soak them in water to get the starch out of them so they wont steam while frying. Use an oil with a high smoke point so they won't burn. like peanut oil at 350F. Salt with course salt while still in bastet while hot cooking rack.
You should peal it first.
