about 50 shots + a lot of hits to take down a door...now I see why it is better to solve a lot of puzzles to find "the key" and open the door...because the door would take more ammo than any boss LOL

do scissortails only appear on very hard or are they on hard mode also?

Single Play Mode they appear on Hard and Very Hard. Network Mode they appear only on Very Hard.
