If you use the enriched long grain rice, you do not need to wash it. However, if you choose to anyway, rinse the rice and keep it in a colander for about 10-15 minutes so that the water drains out completely before adding it to the pan. You can use any type of onion you like.

While your recipe looks interesting it's definitely not mexican or spanish rice. I'm not quite sure what to call it :) If you want mexican rice you need to skip the bell peppers and beans plus use a yellow onion instead of the red (and chop it finer).

Is the kidney bean in the can is cooked/ uncooked? how can i use the kidney bean in packet in this recipe? do i need to cook before adding it to the rice?
@renumangatt : the canned beans are cooked. If you are using the dried one, you will have to soak them and boil them before adding them to the rice :)
i'm mexican, i love the idea to put kidney beans in the rice, we always make it a little different, sometimes we add peas, or slices of potato on top before we cover it, sometimes we blend tomato, fresh garlic and onion in the blender with the stock. when tomatoes are nice in the summer you have to try it fresh as well as fresh garlic. summer rice always tastes better with the fresh tomato!

Here are a few things that may have gone wrong:
- the rice is from different batches (always use the same batch for 1 dish)
- hope you did not peek in ;)
