I can't believe they add metal to the handle to make them detectable in metal detectors... I was hoping to take these on an airplane through the metal detector... damn.
These are awesome knifes! I have the 5.5" Santoku and I just ordered the paring knife and the 7" chef knife.
I cant see myself going back to steel cutlery anytime soon (other then for tableware and boning). These knifes are just so comfortable and extreamly sharp that I dont grab for anything else in the kitchen!

I am sure they send their knifes to local smiths for sharpening. I guess they only do that for grade A knifes or something.
