Well, most people would say get an Electric Guitar, or get a classical guitar with nylon strings. They'd say that because the strings you put on those guitars are softer, and easier to manipulate. Personally, I'd tell people to do the opposite, and start with some martin strings on an acoustic guitar. Yes they're harder to handle when you're first starting out, but you'll pat yourself on the back in the long run. I say use Martin Acoustic SP Bronze.
It sounds like you like "OM" styled guitars instead of Dreadnaughts. An OM (aka grand auditorium) is more of a solo instrument, while a Dread is more of a rhythm instrument. Dreads were originally designed as rhythm instruments for string bands. This said, a lot depends on the choice of woods and the maker. Anyway, check out some OM sized guitars, and I think you'll find what you're looking for.

Well, practice without the pinky. When you feel a little more comfortable with it, add the pinky back.
