Maria doesn't die at all. At the end of 3rd season, (as that was the last season for the show unfortunately) Liz and Max marry. They never seemed to have slept together before that, and unfortunately there are no actual sex scenes, but one is to assume if they did indeed get married, they will have slept together at some point.
