That is done on purpose because when youre sailing close hauled you can tip youre boat leeward. By doeing this youre boat will automiticly try to move wind upwards, and this will resold in winning altitude in an up wind race witch is crushel in a race.

these guys are sailing 470's and can't even keep the boat flat in 8 knots!!!

Unortunately not, 470 must be sailed flat upwind at any wind strenght requiring trapeze.
