I have a copy of a Disney published book from 1952 that derives from the original script and not the movie. Icluded are this scne and a scene where the Blue Fairy disguised as a dove takes Jiminy and Pinnochio to the ocean where Monstro is.

@avalanchesuperstar I had a book when I was a kid (in the '80s) called Walt Disney's Story Land. Not sure if it's the same one? Anyway, Pinocchio was the last story in it, and I remember this scene being in it as well. Also the Pleasure Island scene was different: Lampwick, as a donkey, takes Pinocchio aside and tells him about "donkey fever" right before Pinocchio starts to transform himself. Wish I still had that book, it was one of my favorites.

@MysticalChicken No, my book is a little hardcover book that's about 10-20 pages that's only Pinnochio. But interesting story.
