I think the tasters thought the challanger had a better "pork" taste, using the ingredient better as itself. But I also think they acknowledged the amazing feat from the Iron Chef of working with something he had never worked with and actually producing such prodigious and refined dishes... great panel judging there... unlike Iron Chef USA where the judges are always whining assholes who want more salt and fat in every dish and disdain any sort of innovation/experimenting.
sakai's rice with pig trotters is similar to a popular thai dish called pork leg rice. i wonder if he got the inspiration from his trip to thailand as well. hehe
another great battle. it was close. i wasn't sure who would win. i'm a vegetarian and don't eat 98 percent of what is cooked, but i still LOVE this show, love to watch the culinary warriors go at it. just great. thanks, Archo89. ^_^
Thanks, archo, for another great upload. You're the best! I still don't get how the judges love gelatin, fat, etc., so much (not just this show), but I love the dishes anyway. I'd even eat the pigs' feet. Sakai is a genius.
Reason Iron Chefs always win.. they make very creative dishes. Challengers tend to stay with traditional dishes that don't really surprise the tasters at all. Sakai is probably the most aware of this amongst the other Iron Chefs, as he always thinks up crazy dishes spur of the moment. His dishes in this battle looked so delicious. His win over a Chinese chef using a Chinese ingredient speaks to his caliber as a chef.
as a meat, it belongs to the highly marbled variety, so even if the pork flavour was relatively foreign to french cuisine, the marbling of the meat gives french cooking an advantage. utilisation of the fat in marbled meat is, afterall, more practised in french than chinese cuisine
so i'd call the advantage in this battle not-so-big imho.. still, a glorious show of creativity by sakai. fantastic dishes he threw out today, just plain lovely
The challenger did great, but I agree that the Iron Chef should have won.
The challenger was very familiar with the jinhua ham and prepared some classics, and of course they are great. Sakai took an ingredient he never used before and used it really well. I guess That's what makes him the Iron Chef
