This is Great, yet before your making healthy alternatives, it would be nice to see your version of the Real thing.. Lamb, allspice, the broth with the lamb bones.

We could also use a media dolma<sp? The mussels with the rice and currants.

Turkey is an interesting substitute, but you cannot eat it raw. We always ate the kuftah with a cooked center and raw shell. It made my grandmother mad because we ate them before she could cook them! I miss raw kuftah.
