There's the doujins that explore the relationships (sometimes non-canon) between the characters, like doujins that has Letty as Cirno's mother/mentor. Or deep interpretations of the Touhou characters like jiroo's A Passion For Your Sake (I really recommend that one) and just wholesome and heart-warming stories such as gensoukoumuten's Gensokyou Post Office (幻想郷郵便局) <<<<<<<EXTREMELY GOOD.

And the brony community, at least in my favorite haunt of Nationstates, is actually as large as the Touhou community.
