To avoid burning and turning brown you should use a pan with thin bottom and boil on a very(!) low heat 40 minutes. If the "lemon salt" is crystallized citric acid, this is the right stuff.

Hi. Due to boiling this syrup you need carefully watch for very slow heat. It can be easily overcooked and burnt. Also the important thing is that you have to use bowl with a thick bottom. 40-45 minutes is not a mistake and we made it 100 times already. Trust us - it works well. Just little patience and be careful. Of course you can use candy thermometer. It can prevent from overheating, so you will be able to control it well. You can see it on video: when we add baking soda the syrup is liquid.

I've already had to throw away 2 sets of these, first, it burned after 10 minutes on slow fire (45??? really???) and the 2nd time when I put the baking soda into into it, it became rock hard. So before I try it again, I'd like to know if it even can be used for that. And I still have to find out what I do wrong. Hell, the price of the sugar is like the double ever since the crisis in North Africa.

Of course you can. You can use this substitute in all recipes, where corn syrup is mentioned. Basically corn syrup is used because of it's anticrystallizing properties. Our proposed substitute has same characteristics.

Citric acid can't be substitued in this recipe, because it decomposes sugar to fructose and glucose.

@logginon97 Of course you can substitute citric acid. You can use 4tbsp Lemon Juice to substitute 1tsp of Citric acid.

actually do the same with cream of tartar
1. pour white sugar just enough to cover the bottom of any pan
2. pour water enough to the sugar wet. a little excess is fine but itll take a bit longer
3. put in a pinch of cream of tartar and a dash of salt
bring the ingredients to a rapid boil then cover with a top for about three minutes .
after three minutes take top of and bring down heat and cook till soft ball stage or till when you put a drop in cold water it visibly hardens

it may work for fake blood. i would use a simple syrup cooked down for a very long time to thicken it. then just add food coloring

It is not necessary to store syrup in refrigerator. You can store it in tightly sealed glass container up to 2 months.
