He doesn't discourage normal sliced bread at the very beginning because he is focusing on toasters, most of which are made with sliced bread and bagels in mind. My experience is that most of the good breads won't fit completely in a toaster.
One must remember that humans gain a new set of taste buds every seven years or so. This is one of the reasons why adults can enjoy bitter flavors, whereas children do not. It's also why you (or Alton) might find yourself suddenly enjoying a food you used to hate. A good reason to try various foods every few years.
