This is very close to my original Mac & cheese but i followed yours 2 the Tee & u know how it is...I was so full yesterday & last night taste testing everything 2 make it perfection.LOL. LOVE this recipe! I also made a few of ur appetizers & will B doing sum 4 New Year's & Super Bowl weekend. I always have folks @ my house & ppl dropping in just 2 snack. Thanx 4 the added variety. Off 2 bed now. Had 2 come on & tell U it went WELL! Merry Christmas!

@AndreaMrllo You can use an all purpose seasoning that you might already have on hand just taste it before you put the egg in because the salt content may be different. Thanks for watching :)
I prepared this for Thanksgiving and it was delicious. I doubled the recipe, but omitted the goat cheese. When I make this again and double the recipe, I'll use the same amount of Pepper Jack in your recipe. The extra Pepper Jack was a little overpowering.
@virgosapphires Oh yeah, the pepper jack is powerful unless you liked the spice. Yeah the I used the goat cheese for a slight tangyness while the pepper jack offers a little spice. I'm sure you'll get it :D
@AquaBach11 You are so welcome. Just a tip, you can do the recipe ahead, like the day before, refrigerate it, take it out about 20 minutes or so just B4 baking (let it come close to room temp.) And you can bake it just B4 time to eat :)

This recipe has enough fat (milk, half/half, butter and cheeses) to keep it gooey. Remember no mac & cheese stays gooey once cold if it does check the box for the list of preservatives. lol You'll be fine :)

OKAY, I need your help. My mac n cheese is too stiff now that it has cooled off. I am assuming that when I heat it back up it will be gooey again?
