@XpinklilyX i think there's already enough in the amount of sugar originally in my recipe so i wouldn't add too much more. i prefer the nuoc cham to be not super sweet, but once you make it, just sprinkle a bit of sugar in at a time until it tastes right to you. usually the sauce should be lightly sweet and sour. hope that helps!
Is it ok to add little sugar & garlic cause @ restraints there's some garlic & taste kinda sweet just curious but your way looks so easy then ma mom's she adds sugar & minced garlic too.

If you want it hot, get the Thai chilis at the asian stores. boil them in water for about 10 minutes until soft. drain the water, grind them in a food processor and mix the ground pepper in vinegar and keep the mixture in a clean, dry jar. You can store the jar in a the fridge.

Personally I like making my own peanut sauce for the fresh spring rolls. For the fried ones I like the fish sauce.
hi Blackballed08, my recipe probably calls for a lot less sugar than what's usually served in restaurants, so you can definitely modify it to suit your taste. i don't have a brand to recommend but generally buy the more expensive brands (if your store offers several choices) to get the best taste. hope that helps!

I like to eat at a vietnamese restaurant that is in San Francisco. They serve something called pineapple beef. Do you know how to make it? I know they put fresh cubes of pineapple, steak, jalapeno cut in circles, green bell pepper cubes, pieces of green onion, cubes of white onion and tomato. It is served in a sauce, do you happen to know that recipe?
is this the sauce that accompanies the grilled chicken over rice dish?
