  • For anyone wondering, what he's mixing with the sugar is KNO3 - potassium nitrate, a.k.a. saltpeter. It is one of the core ingredients of old-fashioned gunpowder (the only known explosive before the discovery nitroglycerine), but by itself is not at all flammable - if hot enough, it can melt, but never burn. Had he shown it not burning before he mixed it with the sugar, it would have probably made a better demonstration, showing just how the KNO3 "unlocks" the chemical energy in the sugar.
