HA my way is better, works with perch , gold eye, white fish. gut, scale, remove head and tail if you like. stuff with a bit of butter, onion, cheddar cheese, dill weed. wrap in tinfoil. cook on open fire, bbq, or oven for about 15 min (300) if open fire or bbq turn over half way through.

Not to sound rude, but the two fish he cooks actually look like hybrid striped bass, because of the broken lines they have running up and down the length of the body. Stripers have continuous stripes.

It's mentioned in a tidbit, right after scaling, that farmed striped bass are hybrids (of striped and white bass), identifiable by their broken stripes, and AB mentions they are farmed fish several times.

Shark meat are frequent eaten or served in the Middle East restaurants or homes. It is frequently highly marinated with spices and herbs and pan fried , deep fried or made into stews. I remember a friend of mine from Oman and his wife from Yemen - cook Shark Meat. It does not have much bones , is relatively tough and steaklike but is great if you grilled it.

Shark is also eaten in African states - but - not as often.

As for Japanese Sushi , you need premium grade and fresh , seawater fish.

A good way is to get some good quality fresh tuna or mahi-mahi , dice them up , add them with grapeseed oil , avocadoes , onions tomatoes and cilantro. Its great for summer and you can serve it fresh. Or make it more Ceviche by marinating the fish with Lemon or Lime juice.

hahhaha! i found the opening to this segment to be hilarious. for as long as i can remember i've been afraid of "whole fish" too. its something about seeing the eyes and the head that just really skeeved me out. i've gotten past the idea of eating whole fish but am petrified of cooking it myself. its been a long journey to recovery but im taking it one day at a time. lol
