When you cold pack pickles, you don't have to do the water bath, but the brine must be boiled first. I also have a recipe where you soak the pickles first, overnight in a brine and you can eat them earlier. This is only my second year canning and it's a lot of fun. I've already done banana and jalapenos and pickles and have yet to do my tomatoes.
I have seen recipes where you DO NOT boil the brine solution and others that you do. I am guessing that by boiling and pouring right on the veggies the final product will not be as crunchy. Is that correct?
How long do you have to leave them in the jar before eating? I don't think it takes just as long as the jar takes to cool to soak up the flavor, does it?
